Okay, on the Muench Big Baby page at JBW, it says to cast onto a #13 needle and go. I've never knitted a baby blanket before (!), so do I just do the math for the # of stitches and then go back and forth in stockinette stitch?

Yep - thats it exactly.  With the Big Baby - because it's such a bulky yarn that you won't need more than 75 sts across, maybe even less.  However, I would suggest going with a different stitch.  Unless you brace the stockinette with a few stitches of garter on the sides, it will curl up in  abig way.

A garter chevron stitch would look pretty nice, as well as be pretty easy.  Unfortunately, I left my stitch pattern book at work, so I won't be able to write down the pattern right now.  However, I'm sure if you did a seach online, you some up with something. :-)

I love seed stitch (cast on an odd number of sts and then K1, P1 every row)... or a basketweave (cast on a mult of 8 and then K4, P4 across for 4 rows... then switch to P4, K4)!!

The basketweave is an excellent idea. I like it because your blanket will be fairly reversible meaning the worng side will look pretty good too!  But remember like Hannah said to do a garter stitch (knit every row) border even on the sides. So if after the cast on you knit every row for 6 rows you will want to also knit every stitch about 6 stitches at the BEGINNING of every row. Hope that makes sense.
